Erin Larkin Published 03 August 2022." colour Dark red. nose Mulberry, cherry and bayleaf. palate Floral notes with dark cherries, cassis and a chocolate caramel finish. winemaking With 60% Cabernet and 40% Shiraz, the combined flavours have been brought together by the subtle influences of 10 months in French oak. Cabernet and Shiraz grapes were harvested and fermented and aged separately. Each component was fermented in stainless steel tanks and pressed to tanks before racking off into barrels for malolactic fermentation and maturation. The Cabernet and Shiraz components were blended and fined and filtered before bottling.
