An ancient grape variety, historically indigenous to the Tortonese hills, Timorasso, now brought back to life by taking the name Derthona. Timorasso is one of those wines that could be described as a “red dressed as white”, an overabused expression used to describe white wines with a particular and abundant structure.

The area where the vine is cultivated in Piemonte borders Lombardy, Emilia and Liguria: the Colli Tortonesi. Timorasso, which was on the verge of disappearing in the late 1980s, was rediscovered in the early 1990s by Walter Massa. And so the district started working again with this powerful yet elegant grape, which gives wines quality that is immediately percievable, but that can also evolve very well over time. 

It has a floral charm of great elegance and power, with great minerality.

 

Technical notes The grapes, rigorously harvested by hand, are delivered to the cellar in 20-kilo boxes. Immediately de-stemmed and pressed, it is cold macerated for 12 hours at a temperature of 8 ° C. At the end of the maceration, the grapes are softly squeezed and the must, after a rest in the tank for about 24 hours, is decanted in order to separate the coarser deposits. Finally, alcoholic fermentation takes place inside steel vats and lasts for about 30 days at temperatures between 15 ° -17 °.

 

Tasting notes The color is intense straw yellow, consistent and clear. On the nose the bouquet is aromatic and reminiscent of exotic fruits, as well as white pulp fruit. Pairings Served chilled it is a great aperitif and at the table it is ideal with fish-based appetizers, seafood risottos and seasoned cheese.
